SPANISH TAPAS
Tapas
makes Spanish food what it is. Tapas are small Spanish savoury dishes that are
typically served with drinks in a bar. Tapas is normally a very small dish
however should you wish to have more then you need to ask for raciones or medí
raciones, this will give you a more substantial size dish. There is a never
ending list of different varieties of Tapas you can get. Jamón Serrano is very
popular in Spain. You can find it almost anywhere, even the smallest of
villages. The Spaniard still sell it on the leg although you can buy it already
sliced. You can go to any bar and this will always be available to eat as tapas
usually along with cheese (queso). Another very popular type of Tapas is
tortilla (a type of omelette). In Spain there are two main types of tortilla;
tortilla española and tortilla francesa. Tortilla francesa is just a plain
omelette with nothing in it whereas Tortilla española can be made like this:
Ingredients:

2 medium potatoes, peeled and diced 1cm square

6 eggs, lightly beaten

1 onion, peeled and chopped
-
1 clove garlic, peeled and crushed with salt

Olive oil
-
Seasoning
Method:

Heat oil in pan, add onion and garlic and soften.

Introduce diced potato and sauté.

Lower heat, cover pan, cook until potatoes tender.

Tip potato mixture in with beaten eggs.

Transfer to another pan with clean oil.

Cook over low heat 10-15 minutes until mixture set.

Brown upper-side under hot grill.

Leave to cool and turn out.

Serve in triangles or bite-sized squares.
